Chicken with
pine nuts and raisins
This is an easy chicken recipe. It is also healthy as I have used chicken
breast and olive oil.
Ingredients

Chicken breast cut into small pieces-450g
·
Green chilies chopped-2nos
·
Red chilies crushed-3nos (remove the seeds)
·
Garlic crushed-3 cloves
·
Lemon juice -3tbsp.
·
Cinnamon powder-1 ½ tsp.
·
Pine nuts -1/4 cup
·
Raisins -1/4cup
·
Mint leaves chopped-3tbsp
·
Olive oil- 2tbsp
·
Salt to taste
Method
·
Marinate the chicken with all the ingredients
except half of the oil, and mint leaves (1tbsp.) and keep it in the fridge for
half an hour.
·
Heat the rest of the oil in a deep bottomed pan
and put the chicken along with the marinade.
·
Cover and cook till all the gravy is gone and
open the lid and stir and cook for another 3 to 4 minutes
·
Garnish with chopped mint leaves.
·
Serve with lemon rice or tomato rice and raita.
