Lemon rice
Lemon rice is ideal for picnics as it stays fresh for a
longer time. It can be used with raita,
papad, and homemade fish pickles or chicken tikka.
Ingredients
·
Rice -2 cups
·
Lemon juice -3 tbsp.
·
Curry leaves-2sprigs
·
Shallots-2
·
Green chilies (slit)-2
·
Dried red chilies (broken into two and the seeds
removed)-2
·
Mustard-1tsp
·
Black gram (uzhunnu)-1tsp
·
Masoor dal-1tsp
·
Turmeric powder-1/2 tsp
·
Oil -2 tsp
·
Salt to taste
Method
·
Wash the rice, boil 3litres of water and cook
the rice.
·
Before straining the water add a tablespoon of
lemon juice and enough salt.
·
Heat oil in a large wok and splutter the mustard
seeds.
·
Add black gram and masoor dhal and sauté till it
turns light brown
·
Add shallots, curry leaves, green chilies and
red chilies and sauté till the shallots turn golden brown.
·
Add turmeric powder and after twenty seconds or
so add the remaining lemon juice.
·
Add the rice little by little, mix it gently.
·
Serve with raita , papad and pickles.
