Slow Cooked Tender Rogan Josh

Rogan means fat or clarified butter and josh means intensity or passion. This Kashmiri dish is worth trying.

 

 

Ingredients:

·        Mutton-1kg with bones cut into big pieces

·        Asafoetida- 1.25tsp

·        Cinnamon-one inch (2 pieces)

·        Cloves- 7

·        Cardamom-5

·        Perppercorn-6

·        Big onion sliced- 2

·        Medium Sized Tomato chopped -2

·        Oil -2 table spoon

·        Coriander leaves- handful

·        Salt to taste

·        Yoghurt - 1 cup

·        Water -2 cups

·        Ginger 2 inch piece-1

·        Garlic - A pod

·        Coriander Powder -1 table spoon

·        Fennel Seeds powder - 2 table spoon

·        Paprika - 3 table spoons

 

Method:

·        Clean the mutton and cut into big pieces

·        In oil throw in the cinnamon, cloves, cardamom peppercorns and cinnamon sauté till aromatic.

·        Now throw in the onions the asafoetida and the mutton and brown them .This might take up to 12 -15 min.

·        Sprinkle a little water and add in the paprika and the coriander powder and fennel seeds and constantly sauté it scraping the sediments from the dish every now and then.

·        Throw the mutton into the slow cooker and add in needed salt along with the diced tomatoes.

·        Put in whisked yoghurt and pour in the water also .Give this a stir and let it slow cook for 3-4 hours on high or 8 hours on low.

This recipe has thin gravy and thick layer of oil on top.

The secret for a good roghan josh is to select  a good piece of meat .
