Chick peas salad



Recently I have developed an obsession with salads, as it is easy to make, it is healthy and because you can do a lot of experiments with it easily. I have given a desi taste to this salad by adding a bit of chaat masala while making the vinaigrette. It has a correct blend of sweet and sour taste. You can just have a bowl of this for dinner or wrap it using chappathy for making a sandwich. The given amount will be good enough for four servings.

Ingredients


  • Chick peas – 1 cup

  • Pomegranate- 1 cup

  • Medium size onion -1(finely chopped)

  • Green olives – ½ cup

  • Cherry tomatoes – 8(halved)

  • Parsley leaves cleaned and chopped- 1 bunch

  • For making the vinaigrette

  • Extra virgin olive oil – 2 tsp.

  • Lime – ½

  • Chaat masala- ½ tsp

  • Salt to taste




Method

  • Soak the chick peas overnight.  Pressure cook it with salt for 20 minutes.

  • Make the vinaigrette by mixing olive oil, juice from half a lime, chaat masala and salt well.

  • Mix well all the ingredients in a big glass bowl and transfer it to a serving dish.
