When I have unexpected guests for lunch, I usually make this item as its easy and can be made within less than an hour. It doesn’t need much side dishes also.

Ingredients

• Basmati rice-2 cups
• Cinnamon-2 one inch sticks
• Cardamom-3
• Cloves-4
• Bay leaves-2
• Onion (medium)-2(thinely sliced)
• Garlic cloves- 4 (crushed)
• Mixed vegetables cut into cubes -1 ½ cups(see note)
• Medium thick coconut milk-4 cups
• Olive oil or ghee- 2 tbsp.
• Salt to taste

Method

• Wash the rice and keep aside.
• In a pressure cooker heat oil or ghee and fry the onions and keep aside.
• Then put the whole spices and add the crushed garlic after a minute add the vegetables and salt and saute till it is half cooked and keep aside(3 to 4 min)
• Now add the rice and stir it for a couple of minutes taking care not to break the rice.
• Add the coconut milk and salt and close the cooker and turn the stove to a low flame.
• When the rice is half done ( 5 min) add the vegetables and close the lid again.
• When all the water gets evaporated the rice will be cooked.
• While serving garnish it with the fried onions.
 Note- You can add carrots, beans, cauliflower broccoli, capsicum and mushrooms. Do not put the weight on the cooker.
