When I was studying in school, I stayed in a girl’s hostel. Every Sunday our morning breakfast was bread and vegetable stew. This was the only menu which I liked there. Whenever I make vegetable stew it takes me to the old days. This is a similar stew which is red in color as ground tomatoes are used.
Vegetable Stew
Ingredients
• Potato cut into cubes -1 (medium size)
• Carrots, beans, cauliflower- 1cup
• Onions sliced-2 (medium size)
• Tomatoes sliced -2(medium size)
• Chili powder-1tsp.
• Turmeric powder-1/2 tsp.
• Garam masala powder-1/4 tsp.
• Green chili-2
• Medium thick coconut milk-2 cups
• Oil -1tbsp.
• Salt to taste
Method
• Grind the onions and tomatoes coarsely and separately.
• In a deep bottom skillet add oil and sauté the ground onions till it turns slightly brown.
• Add the masala powders and sauté till the raw smell is no more there (around 4 min).
• Now add the ground tomatoes and stir till the oil turns up.
• Add all the vegetables and cook it in a low flame for 3 min.
• Finally add the coconut milk and green chilies
• And serve with chappathy, bread, appam etc.
