Lentil Tomato Soup

When you are hungry but not ready to spend much time or effort for cooking , this soup will be a solution.  It is healthy, tasty, filling and easy too.


Ingredients

• Lentil -1/2 cup
• Tomato (blanched)-2(big)
• Onion chopped-1(medium)
• Garlic crushed-2cloves
• Salt-1tsp
• Cumin-1/2 tsp.
• Coriander powder-1/4 tsp.
• Pepper powder-1/2 tsp.
• Hotsauce-1 tbsp.
• Basmati rice-2 tbsp.
• Lemon juice-1 tbsp.

Method

• In a saucepan, boil lentil over medium heat.  Cover the pan and cook for 25 minutes
• In another sauce pan cook the blanched tomatoes, which is cut into pieces.
• In the meantime, in a frying pan, heat oil, fry onions and garlic until golden brown color.
• Add cumin, washed rice, coriander powder and pepper powder one by  one and stir for 4to 5 min    and add the cooked tomatoes.
• Add mixture to lentil and bring it to boil. Cover the saucepan and cook over low heat for 20 minutes until cooked.
• Add lemon juice and hot sauce
• Serve hot and enjoy!

Note- you can use lentil of your choice. I used ¼ cup red lentil (masoor dal) and ¼ cup green gram(moong dal).To blanch the tomatoes , put an x mark on the bottom of the tomatoes with a knife and put it in boiling water for 2 mins and then in cold water and you can easily remove the skin.
