Special vegetable biriyani

This veg biryani goes well with papad raita and pickle.  This biryani is made in 3 steps. Then layer it in a big oven proof vessel and bake it.

Ingredients:


For step 1
  • Basmati rice-2 1/2 cups
  • Cinnamon-1inch sticks 2
  • Cardamom -4
  • Cloves -4
  • Lemon juice -2tbsp
  • Salt to taste
For step 2
  • Onions thinly sliced-3(medium size)
  • Tomatoes thinly sliced-2(big)
  • Garlic crushed -1tsp
  • Ginger crushed -1tsp
  • Kashmiri chili powder-1/2tsp
  • Garam masala powder-1/4tsp
  • Coriander leaves chopped-4tbsp
  • Thick coconut milk-1/4cup
  • Olive oil 2tsp
  • Salt to taste
For step 3
  • Potato, carrots, beans-(cut into length wise strips)-1/4cup each
  • Cauliflower, broccoli florets-1/4cup each
  • Olive oil-2tsp
  • Salt to taste
Method:
Step1
  • Boil 4to 5litres of water in a big vessel and add the rice and cook it till it is just done. (Be careful not to overlook it)
  • Before straining it add the whole spices enough salt and lemon juice.
  • Spread it on a wide dish so it won't get further cooked.
Step 2
  • Cook the potato with just enough water and salt.
  • Microwave all the other vegetables in high for 5min
  •  In a wok heat oil and sauté the potato till light brown and add all the other vegetables and sauté for another couple of minutes and add enough salt
 
Step3
  • Cook the onions in microwave high for 4minutes and in a pan add oil and sauté it till light brown
  • Add the powdered masalas and sauté till the raw smell is gone (for2min).
  •  Now add the tomatoes and sauté till it becomes mashed.
  • Add enough salt and coconut Milk and allow it to boil for a minute and add the chopped coriander leaves.
  • Take a big oven proof dish and spray it with cooking spray and layer it with one third of the rice and spread half of the vegetables and the then with half of the tomato gravy.
  • Repeat the step and finally spread the remaining rice and bake it for 20mins in180degree.
  • Serve it with raita, papad and pickle.
  • Note: - You can garnish it with cashews and raisins fried in ghee.
