Coffee oats cake with crunchy top

Years back, when we shifted to a new flat and I was helping my daughter to unpack her things. We heard a door bell. I didn't know that this would be start of a wonderful friendship. When I opened the door I saw a cute looking girl (Sukanya, that's her name) .She asked if she could play with my daughter and from that day onwards they became friends. Eventually her mother, Kiran and I became good friends. Our houses were only a wall apart.
We met daily in between our chores for a "Coffee with Kiran” session .We talked about anything and everything. Shared our new dishes and recipes and all the events of our daily lives . The following is a cake recipe, which I got from her. I just added a crunchy top to it.


Coffee oats cake with crunchy top

Ingredients:
• Oats -80gms
• Flour-80gms
• Instant coffee powder-3 tsp.
• Butter-125gms
• Sugar-125gms
• Eggs -3 (medium size)
• Baking powder-11/2tsp
• Salt-1/2 tsp.
• Milk-3 Tbsp.
• Vanilla essence-2 tsp.
For topping
• Brown sugar- 1/4cup
• White sugar-1/4cup
• Cinnamon-1/2 tsp.
• Butter- 2 tbsp.
• Chopped nuts of your choice-1/2cups

Method :
• In a bowl add both the sugars with the butter mix together like bread crumbs. Add in the nuts and cinnamon powder mix it evenly and keep aside for topping.
• In a large bowl cream together butter and sugar to dropping consistency using electric whisk.
• Sieve together the flour with baking powder, salt and coffee powder and add the oats to it.
• Whisk together the eggs with the vanilla essence
• Now add the egg mixture and the flour mixture to the butter sugar mixture alternatively with a wooden spatula or in a very low speed using electric whisk to a folding consistency.
• Now spread this mixture 25cm x15cm baking dish.
• Finally spread the topping over it.
• Bake it for 40-45min at 180degree till it is done.
Note: you can use nuts of your choice. I used almonds and walnuts.
 Use a tooth pick and poke it to the middle of the cake when taken out, if it comes clean the cake is cooked.
