Carrot raisins and walnut bread
Ingredients:
• Whole wheat flour:1/2cup
• All-purpose flour:1/2cup
• Lightly packed brown sugar:1/2cup
• Granulated sugar:1/2cup
• Baking soda:1tsp.
• Baking powder1tsp.
• Cinnamon powder:1tsp.
• Salt:1pinch
• Sunflower oil:1/2cup
• Eggs:2
• Vanilla essence:1tsp.
• Grated carrots:2cups
• Walnut and raisins:1/4cup each.
Method:
• Preheat the oven at180degree Celsius and grease a medium size loaf tin (12cmx24cm) with cooking spray.
• In a bowl take the flours, sugars, baking powder, baking soda, cinnamon powder and salt and mix well.
• Add the eggs, vanilla essence and sunflower oil and beat it in a low speed with an electric beater for 2minutes.
• Stir in the grated carrots and raisins and toasted and coarsely broken walnuts.
• Pour this in the greased loaf tin and bake it in the oven for 40minutes (till a tooth pick inserted in the middle comes out clean.
