Healthy Banana Bread Muffins






These muffins are very healthy as well as very easy to make. A freshly baked batch of these muffins will be ideal for kids after school. If you feel it is less sweet you can add two table Spoons of honey. After making these muffins let me know whether it is sweet enough for you. It needs very few ingredients which are always available at home. You can also utilize the over ripen bananas at home.

Ingredients


  • Over ripen bananas - 2 (220g)
  • Almond - 1 cup
  • Baking powder - 1/2 tsp.
  • Baking Soda -1/4 tsp.
  • Salt - 1/4 tsp.
  • Cinnamon powder - 1/4 tsp.
  • Nutmeg grated - a pinch
  • Egg - 1(at room temperature)
  • Vanilla Essence- 1 tsp.
  • Raisins- 1/4 cup
  • Chopped nuts of your choice to garnish on top.


Method


  • Preheat oven at 175 degree Celsius and line a muffin tray with silicon or paper cups (no need to grease it).
  •  
  • Powder the Almonds coarsely. Mix baking powder, baking soda, Salt, Cinnamon powder and grated nutmeg using a whisk.
  • In a blender or food processor blend roughly chopped bananas.  Then add vanilla essence and egg. blend properly. Take it out in a bowl. Add all the other ingredients (except chopped nuts) and mix well.
  • Using an ice cream scoop, scoop out the batter and pour into the muffin cups. Garnish with chopped nuts.
  • Bake it for 15 to 20 minutes or until a tooth pick or skewer inserted comes out clean.
