Methi pulao
Methi pulao is a very easy and tasty rice dish, in fact too
easy that you can make it within minutes. And it doesn't need much ingredients
and much accompaniments.
Ingredients
Methi leaves (washed and chopped)- 2cups
Cooked rice-2cups
Sliced onion -1/2 cup
Green chilies-3(see note)
Garlic paste-1tsp
Ginger paste-1tsp.
Carrots (cut into small pieces/julienne)-1 cup (see note)
Garam masala powder-1tsp.
Turmeric powder-1tsp.
Oil -1tbsp.
Salt to taste
Method
Heat a big wok or casserole and add a table spoon of oil.
Add sliced onions and fry for 2 minutes and add ginger
garlic pastes and crushed green chilies.
Sauté till the aroma of ginger, garlic and green chilies are
released in the oil.
Now add turmeric powder, garam masala powder and sauté for a
minute.
Now add cut carrots stir well and cook it for 2 minutes in a
low flame.
Add chopped methi leaves and stir till the color deepens (about 20 seconds).

Add rice, mix gently and well, taking care that the rice
grains are not broken and check for salt.
Serve with raita, papad and chutney.
Note: - when you cook rice, before straining the water add a
tablespoon of lemon juice so that the rice won’t stick together.
If you like the rice to be not so spicy you can deseed the chilies before crushing it.
You can add mixed vegetables (like green peas, cauliflower, beans
etc.) of your choice instead of only adding carrots as I have done here.
