Dates pickle
As Onam is getting nearer I would like to share with you a pickle
recipe using fresh dates. Why don’t you make this sweet, tangy and hot pickle
for this Onam? This delicious pickle
will be a hit for sure!
Ingredients
- Fresh dates (washed, wiped, seed removed and cut into 6)-2cups
- Green chilies (slit)-4
- Garlic -1 pod
- Ginger (julienne)-2tbsp.
- Curry leaves-2 sprigs
- Kashmiri chilie powder-2 ½ tbsp.
- Turmeric powder-1/2 tsp.
- Fenugreek powder- ¼ tsp
- Asafoetida powder- ¼ tsp.
- Vinegar – 3 tbsp.
- Water -1 cup
- Mustard-1tsp
- Gingelly oil-2tbsp.
- Salt to taste
Method
- Heat oil in an iron kadai and splutter mustard seeds.
- Add ginger, garlic, green chilies and curry leaves and sauté till it starts to change its color.
- Switch off the stove and add all the powdered masalas and switch the stove on again to a low flame.
- Stir for about 3 mins (till the raw smell is gone).
- Now add vinegar, water and salt and allow it to boil.
- Add the dates stir well and switch off the stove.
Note: - Do not allow the dates to cook too much as the
crunchiness will be gone.
The amount given here will be good enough to fill a 300ml
jar.It will stay in the fridge for 2 weeks without getting spoiled.
