No bake cheese cake
I got this recipe two decades back from a friend of mine. As
the name indicates, you don’t have to use an oven for making this cake. You can
make it a day prior and can just forget what to serve for dessert! You will get
(3”x2”) twelve pieces out of this given recipe.
Ingredients
For the base
- Digestive biscuits(crumpled)-250g
- Unsalted melted butter-100g
For the filling
- Soft cheese-200g
- Thick cream-200g
- Granulated sugar-3/4cup
- Lemon jelly-1small packet (2cups packet)
- Strawberry topping of your choice(optional)-300g
Method
- Take crumpled digestive biscuits and melted butter in a bowl and mix well.
- Transfer it to a 6”x12” rectangular glass dish and press it well to the bottom( You can also use a 9”spring form pan for easy removal of the cake).
- Make the jelly according to the instructions given on the packet.
- Beat together thick cream and sugar in a glass bowl.
- Add soft cheese and prepared jelly and mix well.
- Pour it on the biscuit base and keep it in the refrigerator for about 6 hours for setting.
- Spread strawberry topping on top and serve!
