No bake cheese cake

 
I got this recipe two decades back from a friend of mine. As the name indicates, you don’t have to use an oven for making this cake. You can make it a day prior and can just forget what to serve for dessert! You will get (3”x2”) twelve pieces out of this given recipe.

Ingredients


For the base


  • Digestive biscuits(crumpled)-250g
  • Unsalted melted butter-100g
 
 

For the filling


  • Soft cheese-200g
  • Thick cream-200g
  • Granulated sugar-3/4cup
  • Lemon jelly-1small packet (2cups packet)
  • Strawberry topping of your choice(optional)-300g

Method


  • Take crumpled digestive biscuits and melted butter in a bowl and mix well.
  • Transfer it to a 6”x12” rectangular glass dish and press it well to the bottom( You can also use a 9”spring form pan for easy removal of the cake).
  • Make the jelly according to the instructions given on the packet.
  • Beat together thick cream and sugar in a glass bowl.
  • Add soft cheese and prepared jelly and mix well.
  • Pour it on  the biscuit base and keep it in the refrigerator for about 6 hours for setting.
  • Spread strawberry topping on top and serve!
