Mutton kurma
Ingredients
- Mutton pieces (diced)-1/2 kg
- Onion sliced-2(medium)
- Shallots-a handful
- Ginger finely chopped-2tsp
- Garlic finely chopped-2tsp.
- Almonds blanched -30g
- Red chilies (dried and deseeded)-4
- Coriander powder-2 tsp.
- Cumin powder-1/2 tsp.
- Cinnamon powder-1/4 tsp.
- Cardamom powder-1/4 tsp.
- Cloves powder-1/4 tsp.
- Sunflower oil-2tbsp.
- Curd -1cup.
- Salt to taste
- 2tbsp chopped coriander leaves for garnishinh
Method
- Grind together shallots, ginger, garlic, almonds and dried chilies to a fine paste.
- Add all the ground spices and blend well.
- Heat sunflower oil in thick deep bottomed pan and sauté onions to golden brown.
- Add the ground masalas and sauté till oil starts to separate.
- Add the meat and stir well and add beaten curd.
- Cook the meat in a very low flame (about an hour) stirring now and then.
- Garnish with coriander leaves and serve hot.
Note:- make sure to stir it frequently so that the masalas won't stick to the pan.
