                                               Mutton kurma


This  is another curry which you can use with rice or any type of bread. It has a very thick rich gravy.

Ingredients

  • Mutton pieces (diced)-1/2 kg
  • Onion sliced-2(medium)
  • Shallots-a handful
  • Ginger finely chopped-2tsp
  • Garlic finely chopped-2tsp.
  • Almonds blanched -30g
  • Red chilies (dried and deseeded)-4
  • Coriander powder-2 tsp.
  • Cumin powder-1/2 tsp.
  • Cinnamon powder-1/4 tsp.
  • Cardamom powder-1/4 tsp.
  • Cloves  powder-1/4 tsp.
  • Sunflower oil-2tbsp.
  • Curd -1cup.
  • Salt to taste
  • 2tbsp chopped coriander leaves for garnishinh

Method

  • Grind together shallots, ginger, garlic, almonds and dried chilies to a fine paste.
  • Add all the ground spices and blend well.
  • Heat sunflower oil in thick deep bottomed pan and sauté onions to golden brown.
  • Add the ground masalas and sauté till oil starts to separate.
  • Add the meat and stir well and add beaten curd.
  • Cook the meat in a very low flame (about an hour) stirring now and then.
  • Garnish with coriander leaves and serve hot.
Note:- make sure to stir it frequently so that the masalas won't stick to the pan.
