Ghee rice is a traditional Malabar dish, which is often served with non-vegetarian side dishes. It can be served with rogan josh or butter chicken.
Ingredients
Basmati Rice-2cups
Clarified butter or ghee-1tbsp
Crushed garlic-2cloves
Onion thinly sliced-1(medium)
Cashews-5-6(split to halves)
Raisins -10
Coconut milk (thick)-1cup
Water-3cups
Salt to taste
Method
Wash the rice and keep it aside in a strainer to allow the extra water to drain
In a thick bottom vessel heat ghee fry the onion, cashews and raisins and keep aside for garnishing.
In the same vessel add garlic and sauté it for a minute and add the washed rice and stir gently for another 3 minutes.
Add coconut milk, water, salt and cover it with a lid and allow it to boil.
Add rice and cook it in a low flame till all the water gets evaporated and switch of the stove.
After 5 to 10 minutes open the lid and gently transfer it to a serving bowl and garnish with fried onion, cashews and raisins.
