Ghee rice

Ghee rice is a traditional Malabar dish, which is often served with non-vegetarian side dishes. It can be served with rogan josh or butter chicken.


 




Ingredients
 
 
 
  • Basmati Rice-2cups
  • Clarified butter or ghee-1tbsp
  • Crushed garlic-2cloves
  • Onion thinly sliced-1(medium)
  • Cashews-5-6(split to halves)
  • Raisins -10
  • Coconut milk (thick)-1cup
  • Water-3cups
  • Salt to taste




  • Method
     
     
     
  • Wash the rice and keep it aside in a strainer to allow the extra water to drain
  • In a thick bottom vessel heat ghee fry the onion, cashews and raisins and keep aside for garnishing.
  • In the same vessel add garlic and sauté it for a minute and add the washed rice and stir gently for another 3 minutes.
  • Add coconut milk, water, salt and cover it with a lid and allow it to boil.
  • Add rice and cook it in a low flame till all the water gets evaporated and switch of the stove.
  • After 5 to 10 minutes open the lid and gently transfer it to a serving bowl and garnish with fried onion, cashews and raisins.
    • Note: - make sure not to break the rice while stirring and serving. The given amount can be served for 5to 6 people.
