Pear pecan rum cake

I like to try new recipes. When I see a recipe and if I feel it will turn out good I usually write it down and experiment it later. This is one of the cake which I tested and turned out really good .Here is the recipe with my own personal twist.

Pear pecan rum cake

Ingredients

•         Pear (medium size) - 3
•         Pecan -1 1/4 cup
•         Light brown sugar-3/4cup
•         Butter - 50g
•         All-purpose flour-1 3/4cup
•         Sugar-1cup
•         Egg (medium size)-3
•         Butter-150g
•         Vanilla essence-1tsp
•         Baking powder -2tsp
•         Salt-1/4tsp
•         Rum -3tbsp
  
Method

•         Clean, deseed and cut the pears into wedges.
•         Butter a 10 inch cake dish.
•         Keep a pan in medium heat add brown sugar and butter.
•         When it bubbles (about 2 to 3min) transfer it into the cake dish.
•         It turns sticky when it cools down and hardens fast (therefore transfer it quickly and spread it evenly over the dish). Arrange the pears evenly on top of it and put the coarsely broken pecans above it.
•         Cream the butter and sugar until fluffy (to a dropping consistency).
•         Separate the egg whites and yoke.
•         Add the egg yolks one by one and the rum to the butter sugar mixture along with the essence while whisking.
•         Sieve the flour, baking powder and salt.
•         Add the dry ingredient s to the butter sugar egg mixture little by little.
•         Now whisk the egg whites until it's stiff and peaks start appearing.
•         Add the whisked egg whites to the cake mixture very gently so that the air is still trapped in it.
•         Pour it gently to the cake dish and bake it at 180 deg. Celsius for 40 min or till it is done.
•         Test it with the help of a tooth pick, when inserted in the middle, if it comes out clean the cake is done.
