Here I am giving another curry for chappathys (tortillas). It’s easy to prepare and healthy also.
Spinach green gram curry (palak parippu curry)
Ingredients:
• Palak (cleaned and coarsely cut)-5 cups
• Green gram(without husk)- 3/4cup
• Turmeric powder_1/4 tsp.
• Grated coconut-1/2 cup
• Garlic-1 clove
• Green chili-1
• Cumin-1/4 tsp.
• Shallots -4
• Mustard-1/4 tsp.
• Red chili-1
• Oil-1tsp
• Salt to taste
Method:
• Grind the coconut, cumin, green chili and 2 shallots to a paste.
• Dry roast the green gram for a couple of minutes. (Till the smell of the gram starts coming).
• Wash and pressure cook it with the turmeric powder and two and a half cups of water.
• Open the lid and add spinach and the coconut paste and stir till it boils. (Do not overcook the spinach as the tastes differs)
• Now in a small pan add oil and splutter the mustard seeds.
• Add the chopped shallots and red chills.
• Stir it till the shallots are golden brown.
• Transfer the curry to a serving bowl and pour the’ thaduka’ (the fried shallots) over it.
