Are you looking for a snack which is little healthier than the normal high calorie snacks?
Then, here is a cookie recipe that contains less calorie than the normal butter cookies.
Somewhat like the ad of digestive cookies, right?
Healthier cornflakes cookies
Ingredients:
- • Sugar: 1/2cup
- • Packed light brown sugar: 1cup
- Egg-1
- • Sunflower oil: 1/2 cup
- • Vanilla essence: 1 1⁄2 tsp.
- • Water: 1/4 cup
- • All: purpose flour: 1cup
- • Whole wheat flour: 1 cup
- • Oats (coarsely ground): ¬2cups (see note)
- • Baking powder: 1tsp
- • Salt: 1/2 tsp.
- • Crushed cornflakes: 2cups
- • Grated coconut: 1/4 cup
- • Walnuts and almonds (chopped): ¬1/4 cup
Method:
• Preheat oven at 180degree Celsius.
• Spray a baking tray with cooking spray.
• In a large bowl put the sugars, egg, sunflower oil, vanilla essence and water.
• Beat it in a medium speed for 2minutes.
• Combine both the flours, oats, baking powder and salt in another bowl.
• Add the flour mixture to the sugar mixture.
• Stir in cornflakes, coconut and both the nuts.
• Take a lime sized dough and press it with the back of the spoon and place it on the greased baking tray
• Bake it in the oven for 12 to 15 minutes.
Note: do not grind the oats finely. I got 48 cookies with the given amount.
