Ribbon rice
This colorful rice is made with three different layers alternatively with a rice layer i.e. . . . . minced chicken layer, vegetable mix layer and a chutney layer. Instead of meat you can use mushroom if you want it to be a vegetarian dish.
 

Ingredients

For meat mix


  • Minced chicken/meat or Enoki mushroom- 200g
  • Onion sliced-1cup
  • Tomatoes chopped-1/2 cup
  • Kashmiri chili powder-1/2 tsp
  • Cumin powder-1/4 tsp
  • Ginger garlic crushed-2tsp
  • Chopped mint leaves-1tbsp.
  • Oil -1tbsp
  • Salt to taste

For vegetable mix

  • Brocoli-100g
  • Carrots-100g
  • Cabbage-100g
  • Beans-100g
  • Frozen peas-100g
  • Oil-1tbsp.
  • Salt to taste

For chutney mix

  • Grated coconut-1 cup
  • Garlic-4 cloves
  • Green chilies-2
  • Coriander leaves-2tsp.
  • Salt to taste
  • Lime juice-2tsp
 

For rice

  • Long grain basmati rice-3 cups
  • Oil – 2 tbsp.
  • Cloves-4
  • Cardamom-4
  • Cinnamon sticks an inch sized-2
  • Coconut milk (thin)-6 cups
  • Pomegranate and chopped coriander leaves for garnishing
Method

Rice


  • Wash the rice, drain it and keep aside.
  • Heat oil in a large bottom pan, add the whole masalas and stir till the masalas leave their smell.
  • Add rice and sauté for a couple of minutes, add coconut milk and cook it.

Meat/mushroom mix

  • Cook the meat/chicken or mushrooms with salt and turmeric powder.
  • Heat oil in a large pan sauté onion for a couple of minutes, add crushed ginger and garlic and sauté till onion changes to golden brown.
  • Add chili powder and sauté for a couple of minutes and add the tomatoes.
  • Stir till the tomatoes gets mushy and add the cooked meat.
  • Stir till everything is combined well, finally add cumin powder and chopped mint leaves, stir well.

Chutney mix

  • Grind together all the chutney ingredients and mix it with lime juice.

Vegetable mix

  • Cut the vegetables thinly and sauté it with salt till cooked (sprinkle water if necessary but make sure that the color of the vegetable is not changed).
Take a large baking dish, spray it with butter or cooking oil.
Spread ¼ of rice and top it with meat or mushroom mix.
Spread again ¼ of the rice on top and layer with chutney mix.
Again spread ¼ of the rice and spread the vegetable mix
Finally layer the rest of the rice on top and bake it in a preheated oven at 180 degree Celsius for 15 minutes.
Take it out in a serving dish and garnish with pomegranate and chopped coriander leaves.
