Spaghetti with chicken

Ingredients
  •  Whole wheat Spaghetti- 200g
  • Chicken cut into strips -200g
  • Pepper powder-1 tsp.
  • Parsley chopped- ½ cup (keep aside the stem)
  • Beans lengthily sliced-1/2 cup
  • Carrots julienne-1/2 cup
  • Cabbage lengthily sliced-1/2 cup
  • Capsicum (any color of Ur choice or mixed) julienne-1/2 cup
  • Eggs -2 (optional)
  • Garlic crushed -2tbsp.
  • Soya sauce- 2 tbsp.
  • Oyster sauce – 1tbsp. (optional)
  • Olive oil-2 tbsp.
  • Salt to taste
Method
  • Boil 4 liters of water in a big vessel and cook the spaghetti (make sure not to overcook it).
  • When it is just cooked add a tablespoon of oil and strain it. (Add cold water as it won’t get over cooked and sticky)
  • Cook the beans in microwave for 2 minutes and add carrots on top and cook for another minute.
  • Cook the chicken with the parsley stem, salt and pepper. When a quarter cup of stalk is remaining switch off the gas and discard the parsley stem and keep the stalk aside.
  • Heat oil in a wok and add garlic after a minute add the cooked chicken strips.
  • When the color of the chicken turns to light brown add the all the vegetables and sauté for another two minutes.
  • Add oyster sauce and soya sauce to the chicken stalk and add this to the vegetables along with the spaghetti.  Stir till everything is combined and add the chopped parsley. Switch off the stove
  • Whisk the eggs with a pinch of pepper and salt and make omelette and cut it into strips and garnish the spaghetti.
