Chicken casserole
Ingredients

Chicken thighs and drumsticks-1 ½ kg
·
Olive oil-1tbsp
·
Potatoes diced -300g
·
Garlic crushed -3 cloves
·
Shallots -1 cup
·
Olives – 1 cup
·
Oregano -1 tbsp.
·
Chicken stock-1cup
·
Lemon -1
·
Salt and pepper to taste
Method
·
Pre heat oven to 180 degree.
·
Remove the skin and clean chicken thighs and
drumsticks.
·
Heat half of the oil in a pan .add chicken,
enough salt and stir till is brown.
·
Take it out of the pan add the remaining oil,
put the crushed garlic, whole shallots,
potatoes and stir until golden brown.
·
Now add the browned chicken pieces, oregano, and
chicken stock.
·
Switch off the stove, squeeze the lemon halves and
add the lemon halves to the dish.
·
Transfer it to an oven proof dish and bake to
for40 to 50 minutes or until done.
·
Serve it with Arabic bread and hummus.
