Curd rice

Curd rice is a favorite dish for most vegetarians.  This is because it is very tasty and easy to cook. You can add steamed vegetables to make it more colorful, healthy and to make it a whole meal.
 

 

Ingredients

Basmati rice-1 cup

Curd -1 ½ cups

Milk-1/2 cup

Chopped shallots-1/4 cup

Chopped Green chili -2

Curd chili (seeds removed)-2

Thinly sliced shallots-2

Chopped ginger-1tsp

Black gram-1tsp

Mustard -1/2 tsp

Curry leaves-1 sprig

Chopped cilantro-2tbsp

Sugar-1/2 tsp.

Olive oil-1 tsp.

Salt to taste

Method

Cook rice with lots of water, strain it and allow it to become cold (at room temperature).

Whisk the curd with milk and add sugar and salt.

In a wok heat oil and splutter mustard seeds, add in black gram and whet it turns lightly brown, add thinly sliced shallots, green chili, ginger and curd chili.

When the sliced shallots turn golden brown add the chopped shallots and sauté for 30 seconds (you can also add steamed vegetables at this point. See note) and switch off the stove.

Allow the wok to cool down and to be at room temperature.

Add curd milk mixture and gently stir in the rice and chopped coriander leaves.

Note: - you can add chopped and steamed carrots and beans so that it will become a whole meal or serve it with pickles and any vegetable dish. If the curd is very sour you can adjust by adding less curd and more milk.
