Vendakka (lady’s finger) mappas
Vendakka mappas is lady’s finger curry cooked in coconut milk. This authentic Kerala dish goes very well
with chappathy
Ingredients
milk-1 cup
Thick coconut milk-1/2 cup
Oil -1 tbsp. Lady’s finger – 1 ½ cup (cut into an inch
length pieces)
Onion sliced-1 small
Tomato sliced- ½ (small)
Green chilies (slit)-2
Coriander powder-1 tsp.
Chili powder- ½ tsp.
Pepper powder-1/4 tsp.
Garam masala powder- ½ tsp.
Turmeric powder-1/4 tsp.
Thin coconut
Salt to taste
Method
Heat oil in a wok, add onion, sauté till light brown, and
add green chili and sauté till its color changes to a darker shade.
Add all the masala powders and sauté till the raw smell is
no more. (About 3 minutes)
Add the cut lady’s finger and sauté till it is half cooked
and it is not sticky any more.
Add salt and thin coconut milk.
Now close the lid and allow it to get cooked for about 4 minutes.
Open the lid and add thick coconut milk.
Stir it for a minute and switch off the stove. (Don’t allow
it to boil)
Serve it with chappathy.
