This is a dish that I learned from my Mother in law .This is typically an authentic Kerala Muslim dish and is served with beef fry, fish molly and also with vegetable korma. This is a common dish in Muslim households and served during their festivals (Eid and Ramzan etc.).
Ingredients:
• Rice flour: 1 cup
• Water: 1.25 to 1.5 cups
• Salt to taste
Method:
• Boil the water with the salt.
• Add rice flour to the boiling water.
• Stir it for half a min. in a low flame.
• Switch off the gas keep on stirring till its blend in well, then take out the mixture and knead the dough in a bowl till soft.
• Make lemon sized balls out of the dough.
• Roll these balls with a rolling pin into thin 10 to 15 cm diameter round discs.
• Heat a flat pan and place the pathris when the pan is hot
• After 30 sec.s flip it over and wait for another 30secs before you apply light pressure with your spatula helping it to puff up making it softer.
• Once it puffs up take it out from the pan and serve hot.
Note :You can use a circular cutter to get a perfect shape and you can store it in a hot pot lined with a towel.
